ok, i know... i'm always saying my M.O. is 'easy' and least-amount-of-prep-possible. and i admit, this post is about making fresh pasta, which we can all agree is a rather high-manintenance endeavor. but occasionally you just gotta do it!!! it's so worth it...
as a family we used to eat excessive amounts of pasta. like, we ate more pasta than anything else. seriously, more often than not, we ate pasta. and bread. but over the course of the last couple of years, we've gotten pretty serious about revamping our eating habits, dramatically decreasing our pasta intake. now, the occasional pasta dishes we consume are made fresh. (bread too, but that's for another post...)
our daughter, izzi, took it upon herself to start us down this make-your-own-pasta path. she's made it several times and i admit, i haven't attempted it without her yet. mainly because it's such a fun thing to do together... also, as you'll see, you kind of need extra people to help!

of course, you can add any of your family-favorite ingredients to your pasta. my personal go-to is an alla checca: cherry tomatoes, lots of garlic, fresh basil and loads of parmesan cheese. for the dish in the above photos, we kept it super simple... parmesan and spinach with a bit of fresh parsley. and a whole lot of salt and pepper. you could even easily create a pasta bar, or byopi (bring-your-own-pasta-ingredients) party! oooh.... that's a good idea! i might have to take my own advice and try that.
